Blog 4: The culinary trends for the summer of 2018​

Summer is in full swing. With even more summery days on the horizon (we hope), this is the perfect moment for either an extensive barbecue, or a simple and refreshing meal. After all, there will be plenty of time next winter to spend slaving over a hot stove! Unless you are the chef of Coperto Restobar, of course.


About five years ago the food we typically associate with summer came more and more in the picture. People of all walks of life have increasingly started to embrace trends like barbecuing, lingering over dinner and enjoying typical summer beverages, as well as speciality beers. Diametrically opposed to the barbecuing trend you will note a rising demand for light, easy-to-digest, healthy meals. These trends were revitalized in 2018, particularly thanks to the arrival of many new, creative chefs and their contemporary creations.


Barbecuing was already popular, but this summer it seems as if the fire has been stirred up to an even higher level. Of course, there’s nothing wrong with a simple slice of pork belly or a sausage, but we aren’t afraid of a challenge: huge hunks of meat like steak and veal, a trend that has blown over from the United States. My golden tip: be patient and enjoy yourself! Grilling a large piece of meat takes time. Don’t have a lot of patience? Fish like salmon, tuna steak or sardines, seasoned with a few herbs and spices, are perfect for grilling and ready in no time at all.


Do you prefer a light, easy-to-digest meal? There’s hardly anything better than a refreshing salad on a scorching hot day. The days that a salad was synonymous with a bowl of lettuce and was only served as a side dish are past. The salad has become a complete meal that allows for infinite combination and variation. Not only in summer, but in winter too. Keep the number of ingredients down and play around with textures like (toasted) nuts or seeds and dress your salad with a nice vinaigrette. It’s as easy as pie!


Not only is the food menu in the spotlight in summer, so is the drinks menu: featuring not only fresh-tasting alcohol-free and regular beer, but also wine beer and even beer brewed with seaweed! The sky is the limit!

The current trend towards healthier food and drinks hasn’t gone unnoticed at pavement cafés, considering the growing demand for low-calorie beverages. Mineral water, both plain and sparkling, with an added flavour is still popular and we have also noted an abundance of healthy fruit and vegetable juices that contain cucumber, beetroot, celery, avocado and banana pass the review.
