Meet Remco Jansen, the chef de cuisine at Coperto Restobar, the light and airy restaurant next door to Pillows Grand Hotel Ter Borch. Remco has been cooking since he was old enough to hold a knife. After demonstrating his culinary skills in various restaurants, including Bib Gourmand restaurant Intens in Voorst, Remco accepted a new challenge as the chef de cuisine at Coperto Restobar.

What is Coperto?

Coperto’s culinary style is inspired by French-Italian cuisine, serving classic dishes with a modern twist. Coperto literally means “fully covered”. And this is a very apt description of the restaurant’s concept as it strives to cover every one of its guest’s needs, from beginning to end. Starting with the service right down to the food on your plate. Coperto is synonymous with outstanding service and quality in a home away from home.

The wow factor

The chef and his team like to work with local and organic products. But Remco also finds flavour extremely important. He adds a wow factor to the dining experience, by preparing and presenting products in a very special way. Guests are often surprised, saying “I had no idea you could do this with carrots”. Setting such a high standard can also be a source of pressure. But the chef succeeds in keeping his cool: “Cooking is 40% common sense and 60% intuition. Follow this rule and the results will always be good.”

Dreams for the future

The chef’s main purpose in life is to be awarded a Bib Gourmand, which is a token of Michelin’s appreciation for an excellent price-quality ratio. He hopes to achieve this goal in the short term with his clear vision and passion. Another ambition is to see the restaurant listed in a professional publication such as Gault&Millau. But the chef’s dreams don’t stop here. He also hopes to be able to assist new Pillows Hotels to launch a culinary concept in the future. But one thing is certain for now: Coperto cannot do without Remco and vice versa for the foreseeable future.
